Pie Dough


Yield twp 9" pie/tart dish

18 oz ofFlour measured by weight
12 oz of Butter, cubed, chilled, measured by weight
1/4 tsp of Salt
3 Tbsp of Water, ice cold


In food processor, combine all ingredients except water. Pulse food processor until butter is mixed in well. Add water while pulsing five or six times. Remove crumbly pie dough mix onto cutting board and form into cylinders with hands. Wrap in plastic wrap and freeze. Remove from freezer; if frozen solid, let sit out for about 15 minutes before grating into pie mold. Press grated dough into mold evenly on all sides. Use as your recipe demands.
