Crab Salad Tower

Ingredients

Arugula – sliced salad type
Avocado – diced, seasoned with salt & pepper
Mango – peeled and diced
Pico de gallo – (diced onion, tomato, Serrano pepper, lime juice, salt & pepper)
Jumbo lump crab (seasoned with lime juice, salt & pepper)
Honey Lime Vinagrette
Fresh Cilantro for garnish

Needed: 1 section of 3” PVC pipe per tower (approximately 3” tall too)

Directions

Peel mango, slice and dice. In a bowl, combine mango and pico de gallo. Stir together. In a separate bowl, toss arugula with honey lime vinagrette.

Place PVC pipe on plate – layer in pipe in this order:
Diced avocado
Arugula mixture – mash down a little after this layer and continue with:
Mango/Pico mixture – mash down a little more and continue with:
Jumbo lump crab
After this last layer, gently lift off PVC pipe while gently pressing contents down with spoon.

Serve with extra honey lime dressing off to side. Serve with corn tortilla chips. Garnish with fresh cilantro.
