1 ½ cups Diced Onions
2 tbsp Butter
3 cups Spinach (chopped frozen or fresh-squeezed and drained)
1 tbsp minced garlic
1 ½ cup feta cheese
2 tbsp fresh chopped dill
¼ cup buttermilk
1 to 2 tbsp olive oil
3 medium eggs
Salt & Pepper to taste
Fresh lemon juice from 1 lemon
Filo Dough – can be prepared in advance and frozen
In sauté pan, sauté onion and garlic in butter. In large bowl – add spinach, feta cheese, eggs, salt & pepper, lemon juice, dill and stir. Add buttermilk and stir. When onions/garlic are done, add to spinach mixture and stir well. Drizzle olive oil over mixture and stir.
Prepare filo dough by brushing sheet of dough with melted whole butter. Start at edges to keep dough from shifting. Once whole sheet is buttered, add another sheet over it and repeat process for a total of 5 sheets. Best to work with room temperature melted butter.
Cut rectangular dough into 3 long rectangular sections. Add a scoop of mixture at bottom of each long strip of dough. Roll up into triangular shape wrapping dough as you go and wrap tail of dough. Place on cookie sheet lined with parchment paper, brush outside of dough with melted butter and bake at 350 til golden brown – about 20 minutes.
