Lemoncello

Ingredients

5 oz of lemon peel, pith free
1 Liter of 190 proof alcohol
1 Lemon Leaf
Juice of 2 Lemons

Directions

5 oz of peeled lemon for every liter of alchohol
For this recipe, Meyer Lemons were used

Peel lemon and make sure that all the white pith is removed from the lemon peel.

In a large glass jar, add:

5 oz of lemon peel, pith free
1 Liter of 190 proof alcohol
1 Lemon Leaf
Juice of 2 Lemons

In a separate pitcher, dissolve 1 lb and 12 oz of sugar in 1 liter of water. Once completely dissolved, add to lemon peel mixture and mix well. Allow to sit overnight in refrigerator. After this period, strain lemon peels out of mixture, transfer to bottles and store in freezer. Recipe makes 2 liters, so you will need 2 liter bottles for storage.
