Ingredients
1¼ lbs boneless, skinless chicken breast, cooked and diced 1cup diced, fresh pineapple
3 ea stalks celery, thinly sliced
½ cup thinly sliced green onions
¼ cup coarsely chopped dry-roasted unsalted peanuts
1tsp salt
¼ tsp black pepper
3 Tbsp chutney, such as Major Grey’s
2 Tbsp lemon juice
2 tsp grated or minced lemon zest
1 tsp curry powder
¾ cup mayonnaise or low-fat mayonnaise
Shredded or chopped romaine lettuce
Pineapple leaves for garnish, optional
Directions
Mix all ingredients together well. Serve as a light dinner or lunch on a bed of romaine. Garnish with pineapple leaves if desired.
