California Style Pork Loin
Mango Pico Ingredients & Assembly:
Diced Mango added to Traditional Pico ingredients:
Diced Serrano Peppers
Chopped Cilantro to taste
Squeeze fresh lime juice
Toss all ingredients together and top on grilled Pork Loin.
Can substitute Mango with Avocado for a different pico topping.
Jicama Slaw Ingredients & Assembly:
Julienned Jicama Root
Sliced Red Cabbage
Slice White Cabbage
Sliced Red Onion
Squeeze Fresh Lime Juice
Apple Cider Vinaigrette
Toss together all ingredients, add apple cider vinaigrette dressing for flavor. Serve as a side dish.
Pork Loin Steaks:
Cut thin, pounded down. Rub with minced garlic, add salt & pepper and rub with olive oil, then grill until done to medium. Do not overdo as it will dry out the pork loin.
Pork Loin Assembly:
Once Pork Loin is done, top with Mango or Avocado Pico. On top of this, add shredded Chihuahua Cheese and broil until cheese is melted. Serve hot with Jicama slaw as side dish.
