Beef Collage

Filo Collage Assembly:
Completely brush first layer of filo dough with butter. Add second and third sheet, buttering between each sheet. On top of third sheet, lay out your collage pattern using thin slices of mushrooms, herbs, edible flowers, etc in a line. You should be able to fit about 4 collage assemblies on the complete sheet of filo dough. Trim between each collage line and wrap around a pre-cooked filet steak. Roll up parchment paper and insert into filo dough to hold while baking. Bake in 350 oven until filo dough is browned (about 10 minutes). Carefully remove parchment paper when collage is removed from oven.

Meanwhile, sauté mushrooms in butter, garlic and shallots over stovetop. Heat port wine demi glaze.

On bottom of serving plate, pour out a little port wine demi glaze. Place finished filo dough wrapped steak on top of demi glaze. Fill collage tower with sautéed mushrooms and garnish with vegetables or edible flowers at bottom with chives inserted into top of tower for effect.
