- 3 cups of Fresh, washed Arugula lettuce
- ½ Lemon (Large)
- Sea Salt (to taste)
- Cracked Black Pepper (to taste)
- Amici Extra Virgin Olive Oil
- Fresh Parmesan cheese
Wash and dry Arugula lettuce. Roll lemon on counter to develop juices. Cut in half and squeeze lemon juice onto lettuce, making sure to strain out seeds. Add extra virgin olive oil to coat lettuce. Add sea salt and cracked black pepper to taste. Toss salad well to mix lemon juices and olive oil. Serve with fresh, shaved parmesan cheese over salad.
