1 head Cauliflower
2 cups Mashed Potatoes
¼ cup Butter
Salt and Pepper
Lemon juice from ½ a lemon
2 each Sea Scallops
2 slices Bacon
1. Cut Cauliflower into half inch pieces. Place on a sheet pan, season with olive oil, sea salt and cracked pepper. Bake at 350 degrees for 20 minutes or until golden brown.
2. After the cauliflower is done, chop in the food processor.
3. In a bowl mix together mashed potatoes, butter, cauliflower, salt & pepper to taste, and lemon juice.
4. Wrap the sea scallop with a slice of bacon. Season with salt and pepper. Sear the scallop in a hot sauté pan with olive oil. When both sides of the scallop have been seared, finish cooking in an oven.
