Pork Belly cut – approx 2 pounds
1 oz Minced Garlic
½ cup Large Diced Onion
1/3 cup soy sauce
½ cup Brown Sugar
¾ cup Fresh Squeezed Orange Juice
Fresh Squeezed Lemon Juice from 1 lemon
1 Cinnamon Stick
4 to 5 cloves
Salt & Pepper to taste
DirectionsTrim pork belly sides to remove any extra fat. Rub the meat side of the belly with garlic, salt & pepper (taking care not to add too much salt since soy sauce will be added). Place pork belly fat side down in shallow baking pan. Cover with diced onions. In a bowl, mix soy sauce, brown sugar, orange and lemon juice and pour over pork. Add cinnamon stick and cloves placed throughout dish. Cover with foil and bake in 350 degree oven for about 4 hours. After 4 hours, remove from oven, uncover meat and flip so that fat side is up and bake for another 2 to 2 ½ hours uncovered also at 350 degrees.
Remove from oven and allow to cool down slightly in remaining liquid. Remaining liquid can be reduced down over stove and served as glaze for pork belly.
