"Carrie's Cranberry Salsa", submitted by Barbara Smith, BVTM

2 cans whole cranberry sauce
1/2 - 3/4 bunch cilantro
1/2 purple onion
6 fresh jalapenos, seeded
1 large can mandarin oranges, drained and divided
1 T. fresh lime juice

Chop cilantro, onion, jalepenos and half of oranges in a food processor. Rouch chop the remaining oranges by hand. Stir all ingredients together in a large bowl and let sit a couple of hours before serving (overnight is fine).
Serve in a pretty bowl (looks really festive in crystal) with Frito's Scoops (not so festive, but they taste great together!).
