of the Christmas holiday has brought people together. Families
throughout the world prepare special holiday foods together. And, when
people gather to celebrate this holiday, why not cook up a feast for
all to share!

Christmas
Morning Rolls
Ingredients Needed:
1 pkg 24 frozen dinner rolls
1 pkg butterscotch pudding mix (not instant)
1/2 cup butter
3/4 cup brown sugar
1/2 tsp cinnamon
l/2 cup chopped nuts
Directions:
Place rolls (still frozen) in greased bundt or tube pan. Sprinkle with
pudding mix. Cook remaining ingredients until blended and pour over
rolls. Cover and leave setting overnight at room temperature. Bake at
350 degrees for 30 minutes.
Serve warm.
Christmas Cheese
Ball
Ingredients Needed:
2 8 oz. pkgs cream cheese, softened
4 oz. blue cheese, crumbled
8 oz. cheddar cheese, grated
1 jar kraft Old English Cheese
1tsp Worcestershire sauce
2 tbsp grated onion
1 cup pecans, finely chopped
1/2 cup fresh parsley, chopped (optional)
Directions:
Combine cheeses with onion, and Worcestershire. Beat until well
blended. Shape in a ball or several small balls for gift giving. Wrap
in plastic wrap, then in foil; refrigerate overnight. 1 hour before
serving, roll in pecans and parsley.

Christmas Cookies
Ingredients Needed:

2 cups Captain Crunch peanut cereal
2 cups miniature colored marshmallows
2 cups mixed nuts
2 cups mixed nuts
2 cups puffed rice cereal
1 pkg almond bark (white or dark), melted
Directions:
Mix the first four ingredients in a large bowl. Melt almond bark in the
microwave (or in a double boiler) according to package directions. Pour
over the cereal/nut/marshmallow mixture. Stir to completely coat the
dry mixture. Spoon by TBSP fuls onto waxed paper. Allow to cool. Store
in a tightly covered container
Christmas Fruit Drops
Ingredients Needed
1-1/2 cup sifted plain flour
1/2 tsp baking soda
1 tsp salt
1/2 cup butter
3/4 cup sugar
1 egg
1/2 tsp vanilla
1 cup mixed candied fruit, finely chopped
1/2 cup nuts, chopped
Directions:
Stir together flour, baking soda and salt. Cream together butter and
sugar until light and fluffy. Add egg and vanilla, beat well. Blend
candied fruits and nuts with flour mixture; blend into creamed mixture.
Drop by tsp ful on an ungreased cookie sheet. Bake at 350 degrees for
10 minutes or until brown. Allow to cool on the cookie sheet for about
3 minutes before removing to a wire rack to cool completely. Be
careful, these burn easily.
Holiday
Bread Pudding
A Dollywood Recipe
Ingredients Needed
6 slices day old bread
2 tbsp melted butter
1/2 cup raisins
4 eggs
2 cups milk
3/4 cup white sugar
1 tsp vanilla
1 tsp cinnamon
Directions:
Preheat oven to 350 deg. In a bowl, break the bread into small pieces
and add the butter. Set aside. In a large bowl, beat together eggs,
milk, sugar, cinnamon, vanilla and raisins. Blend well. Pour the bread
mixture into the large bowl and stir. Pour mixture into a baking pan
and bake for approximately 45 minutes or until it springs back when
pressed lightly.
Sweet
Potato Sausage Balls
Ingredients Needed:
3 cups biscuit mix
1 cup sharp cheddar cheese, shredded
2 cups sweet potatoes, mashed
1 pound sausage
Directions:
Combine all ingredients well. Shape into balls and place on greased
baking sheet with sides.
Bake at 350 for 20 minutes or until brown
Real Banana
Pudding
Ingredients Needed:
1/2 cup sugar
2 eggs
2 cups milk
1 tsp vanilla
2 TBSP flour
1/4 tsp salt
4 ripe bananas
1 box vanilla wafers
Directions:
In a cooking pot, blend flour into sugar and then beat in eggs. Add
milk and vanilla. Stirring constantly, bring to a boil over medium
heat. When boiling and thick, remove from heat. Allow to cool. Layer in
an oven proof bowl alternating wafers, bananas and pudding. Repeat
until all are used.
Meringue:
8 oz egg whites (about 4)
8 oz granulated sugar
Beat egg whites on medium speed until soft peaks form. Add sugar slowly
with beaters running until stiff peaks form. Spoon meringue on top of
pudding. Brown in oven set at 325 deg for 20 minutes or until meringue
is lightly browned.
Ranch Pasta Salad
Ingredients Needed:
1/2 cup onion, chopped
1/2 cup shredded cheese
3 cups raw broccoli, chopped
1/2 bag tri-colored rotini noodles, cooked according to pkg directions
ranch dressing to taste
Directions:
In a large bowl, mix onions, cheese, broccoli, and noodles. Toss with
ranch dressing to your taste. Chill before serving.
Quick Christmas
Chili
Ingredients Needed:
1 1/2 to 2 lbs lean ground beef
1 24 oz jar salsa (mild, medium or hot to your taste)
3 to 4 TBSP chili powder
1 tsp ground cumin
2 or 3 15 oz cans beans of your choice. (I like pintos best)
V-8 or tomato juice to thin to proper consistency
Directions:
Saute beef in a heavy soup pot until no color remains. Drain any excess
fat. Add chili powder and cumin and stir to mix. Pour in salsa and
beans and allow to come to a boil. Taste and adjust seasonings. Add
juice to desired consistency. Bring back to a full boil and reduce heat
to a simmer. Cover and allow to simmer, stirring occasionally, about 30
minutes to blend flavors. Serve hot with grated cheese, sour cream and
oyster crackers.

Cranberry Crisp
Ingredients Needed:
1 pkg yellow cake mix
1 tsp cinnamon
1/4 tsp nutmeg
1 cup butter, softened
1 cup chopped nuts
1 can apple pie filling
1 can (16 oz.) whole berry cranberry sauce
Vanilla ice cream or Cool Whip (optional)
Directions:
Preheat oven to 350 degrees. Combine dry cake mix and spices in bowl.
Cut in butter until crumbly. Stir in nuts. Set aside. Combine pie
filling and cranberry sauce in ungreased 13x9 inch pan. Sprinkle crumb
mixture over fruit. Bake 45 or 50 minutes until golden brown. Serve
warm with ice cream or Cool Whip. For a change, you might like this
with peach pie filling
Beef and
Bean Dip
Ingredients Needed:
1 pound lean ground beef
1 cup chopped onion
1/2 cup ketchup
1 tsp chili powder
dash of ground cayenne pepper, or to taste
1 tsp salt
1 small can (4 ounces) chopped mild green chile, drained
1 can(about 16 ounces) undrained light red kidney beans
1 cup shredded Mexican Mix cheese, shredded
tortilla chips
Directions:
Cook ground beef with 1/2 cup chopped onion until meat is
browned and onion is tender. Stir in ketchup, chili powder, and salt.
Add chopped chile and beans; mash mixture well. Heat through; top with
cheese and remaining 1/2 cup chopped onion. Keep beef and bean dip warm
in chafing dish, fondue pot, or crockpot. Serve with chips.
