A staple of downtown Bryan is closing its doors on Saturday.
After 15 years in business, the Square One Bistro is saying goodbye to downtown Bryan on Saturday night. But don't expect things to stay dormant at the restaurant's location. Owner Charles Stover says he will convert the downtown diner to a Stover Boys Burgers, like his location on Wellborn Road.
Stover believes downtown Bryan is in need of more fast paced dining and he believes his burger joint will fit the bill.
"I think Square One kind of lost its voice. People thought that maybe we were competing with Madden's or Chef Tai or some of the guys around town that are doing a little more fine dining. We were just trying to appeal to the average diner who wants to only spend a couple of bucks on a nice meal. I think that message got lost because we made it a little more upscale feeling," said Stover.
Stover Boy's Burgers will open its downtown Bryan location in the middle of next week.
