Shelly Cmajdalka has been working as a food inspector for Brazos County for four years and she's seen a lot in that time.
"One of the worst things that I saw was a tray with raw meat on it with salsa directly below it. Blood was dripping down into the salsa. That was a bad one," said Cmajdalka.
That's why conducting inspections is important to her not only professionally but personally. Shelly goes through ever nook and cranny of area restaurants and sometimes it's good news for the owners, other times it's bad. Either way, those inspections will now be a side order away from the menu.
A new mandate will force restaurants to post their most recent score from the Brazos County Health Department 10 feet from the door.
Robert Van Brunt owns Hot Dogs Etc in Bryan and he has no problem posting his perfect score.
"We see it a little differently than most people. When (customers) come in and they see my 100 percent on the wall from my inspections, we get a lot of positive remarks and it creates a very good atmosphere."
That's not always the case.
"I can tell you that we've had some resistance from owners on this," said Don Plitt, the Environmental Health Service Director for Brazos County.
Turns out some owners are worried about posting scores that may reflect negatively on their establishment.
"If you score good grades all the time, this would be to your advantage to have up on the wall. So some were for it," said Plitt.
But it all comes down to public health which the Brazos County Health Department is all for.
"I think the public is going to appreciate this and we'll probably have this up for quite a while," said Plitt.
