The Texas A&M University Animal Science Department is teaching students how to prevent salmonella and E-Coli outbreaks. The curriculum focuses on prevention, enforcement, and how to alert consumers about food safety issues.
"Food safety is everyone's responsibility. It's the responsibility for the processor, it's the responsibility for the preparer of the food, it's the total continuum. It's not a single segment that has the greatest responsibility," says TAMU director of Food Safety, Kerri Harris.
A food safety panel has developed systems to better track the origins of a bacterial outbreak. This year, a massive salmonella outbreak in peanut products sickened hundreds and was suspected of causing nine deaths and led to one of the largest product recalls in United States history.
