COLLEGE STATION - A restaurant renaissance is happening in Bryan-College Station.

Three new restaurants, including two with names you'll recognize, are opening just days apart.

News 3 got a look inside some of the newest restaurants across town.

The sign is up and room is being made ready for the newest Italian Restaurant in College Station.

Chef Tai Lee partnered with some New York City restaurateurs as they open Paolo's Monday with 42 employees.

"We really thought this was the right time to ride the wave and going into the market right now," he said.

He's opening up on University Drive, across the street from his existing restaurant Veritas.

"It's right before the football season with the SEC and with the whole town just you know developing and expanding. I mean I have been here since 1998 and seen this town growing and I've never seen this town grow so fast," said Lee.

On Texas Avenue across from campus what was most recently Sully's Sports Grill and Bar will in a few weeks be a Torchy's Tacos.

And just up Texas Avenue in Bryan sits the new and nearly twice as big Café Eccell.

"I think they can expect all of the things that they saw before plus more," said Costa Dallis, who is the CEO and Chef of Café Eccell.

He hopes to eventually have 70 employees here and in a few months will also open the drive through for pizza's and desserts and coffee.

The bar used to be the buffet line of Luby's.

"We're thankful to the community. We're happy to be here and we're really excited," said Dallis.

Cody Smith the general manager and says people are already piling in.

"Last night was our grand opening. It was real busy, our bars killing it, everyone's loving it," said Smith.

Another popular place that's just days away from opening up is the Saltgrass Steak House here in south College Station. The restaurant is working to get their certificate of occupancy this week and open up just in time for the first Aggie football game.

"The competition makes us do a better job and I think it's a good thing for the community," said Costa Dallis.

A community that has plenty of new places to feed its appetite.

College Station City staff say they haven't seen updated plans for a Pappadeux Seafood Restaurant.

The original plan was to build on University Drive on land that is now a Scott & White Healthcare building.

But the company is trying to decide if that is still the best location
