Herbert's Cajun Food Moving to Bryan

Hebert's Cajun Food isn't much to look at but its cajun cooking tickles the tongue.

"I love Hebert's," said A&M employee Layne Wyle.

For 20 years students have been crossing University Drive for a little taste of creole.

"It's a big part of the college tradition and campus," said Bryan resident Jason Clements.

And the recipe to this spicy specialty is a safe as a secret in the middle of the swamp.

"We'll sell it to you, my dad says for $100,00 cash and you can have it. Or you can marry into the family and have it and I am single. Very single," said Mark Hebert.

Only problem is, Hebert's days near campus are numbered.

"We going to miss the place. It is really sad for us," said owner Paul Hebert.

Paul opened the restaurant in the early 90's and on June 12th, his 68th birthday, the food shack will close its door and windows to make room for The Stack, a new multi-use student living facility.

"We're going to miss our students that come walking across the street to eat. We're going to miss that a lot," said Paul.

"I get to meet people from A to Z," said Mark.

Paul's son Mark carries on the family tradition of cajun cooking but telling customers Hebert's will be moving out is a challenge he's ready for.

"It's time to step up. It's time to move on," said Mark.

As customers start to learn about the pending move of Hebert's, their dismay is about as hot as a pot of boiling crawfish. And instead of saying Aaaaeeee! They're asking Aaaaawhat?"

"It's going to be sad to see it go," said fan Tommy McCoy.

McCoy works at Texas A&M and he feels his lunch options are about to get much more limited.

"With us only having 30 minutes for lunch now that they're moving over there, I guess we're going to have to eat McDonald's or Taco Bell," said McCoy.

Hebert's will be moving to the Tejas Center in Bryan but leaving its original home will be an emotional roller coaster for the Hebert's that's tougher that a Louisiana alligator.

"I'm going to have the crying hiccups. Even though we're going somewhere else, there are a lot of memories here. It's going to missed. We're going to have to start some new ones at the new place," said Mark.

"I believe that we've got enough of a following after 20 years that we should be ok at the other place. Hopefully," said Paul after a long pause.

The Hebert's won't know how they'll do till they open the new location but working by the student schedule will now be a thing of the past.

"Now we're going to have to start opening like a restaurant is supposed to open," Paul said with a laugh.

Paul and Mark hope to have the new Hebert's Cajun Food opened in Bryan by July and plan on expanding their menu with more of those Louisiana favorites.
