Cellar Master ________________________________________ FLSA Status: Exempt Job Status: Full Time Work Schedule: 7:00 a.m. – 5:30 p.m. Mon- Thurs and Harvest hours as needed Reports To: COO or Winemaker Amount of Travel Required: N/A POSITION SUMMARY This position will perform and oversee all laboratory analysis of juices and wine, coordinate wine movements between wine maker and winemaking personnel, and help in production tasks. Responsible for overall sanitization practices of the winery. Ability to step in and perform all winemaking functions. Essential Functions Statement(s) • Winemaking o Supervise the operation, sanitization, and maintenance of all winemaking equipment including but not limited to pumps, tanks, filters, barrels, hoses, clamps, fittings, etc. o Supervise all lab analysis on juices and wines and ensure proper documentation of all additions, movements, and changes in the lab books. o Generate, coordinate, and execute daily wine work orders and maintain documentation of completed tasks. o Regularly update (daily, weekly, monthly) wine movement records and varietal files. o Prepare yeast inoculates and monitor all fermentations o Supervise pick up and storage of all clamps, valves and winemaking equipment o Maintain sanitation of all winemaking spaces and storage spaces o Care and maintenance of all pumps, hoses, and production machinery. Problem solve equipment malfunctions o Understanding of wine progression and abnormal occurrences such as VA, mercaptans, Brittomyces, refermentations, etc. and how to correct o Ability to identify wine varietals, styles, and replication of Messina Hof wines o Prepare assigned wine blends to meet brand quality requirements, CWUS specifications, regulatory requirements and packaging schedules o Manage allocated wine inventories to optimize blend quality o Provide wine quality assurance for finished wines and imported wines brought to Messina Hof for bottling and packaging participate in vineyard quality evaluations o Develop and maintain a winery training program to ensure all cellar staff are following correct protocol. • Inventory Controls o Supervise weekly update of the winemaker database and bulk wine charts. o Inspect records of bulk wine inventory and reconcile to physical inventory o Prepare monthly bulk inventory reports for use in TTB and TABC tax statements • Sanitization Program o Responsible for the supervision of all sanitization practices in the winery. o Inspect the sanitization compliance of the bottling line before each bottling starts. o Report all violations of sanitization standards to the COO or Winemaker. • Miscellaneous Duties o Help with production tasks (crush/press, bottling, wine movements) and vineyard work as required. o Perform wine tastings and wine classes. o Study wine technology and research to improve quality and efficiency of all winemaking functions o Aid in crop harvest process o Other duties as required POSITION QUALIFICATIONS Competency Statement(s) • 3-5 years of cellar master experience • Degree in chemistry, agronomy, crop science, or related and/or 24 months of lab analysis experience. • Ability to use a personal computer PHYSICAL DEMANDS The physical demands described her are representative of those that must be met by and employee to successfully perform the essential functions of this job. The employee is frequently required to stand for long periods of time. The employee must frequently climb up and down stairs and ladders. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
