One of my favorite places to eat is McAlister’s Deli. It is the perfect restaurant to go to when I’m feeling hungry, but want something light. The menu is filled with all kinds of sandwiches, salads, soups, spuds, and a bunch of other things. There’s even a ‘light’ menu to help guide you when you’re looking for something on the healthy side. One of my favorite meals to order is the Southwest Cobb Salad. This salad contains chicken, black beans, corn, tomatoes, and avocados.
I happened to come across a recipe that almost replicates this one minus the lettuce. I nearly fainted with excitement because it’s that good y’all! So put it on a wrap or eat it by itself, either way you’re going to love it!
1 rotisserie chicken
1 can of black beans
1 can of sweet corn
1. Cut chicken into pieces. Then dice up avocado and tomato.
2. Throw the ingredients into a bowl. Then throw in black beans and corn.
3. Mix it all up and refrigerate.
You now have a perfectly delicious salad! If you need a little extra flavor, try adding some chipotle dressing to the mix!
