Thirsty Thursday, Cinco de Mayo style! I am obsessed with anything Mexican and tequila based so it’s safe to say Cinco de Mayo, or Cinco de Drunko as I like to call it, is a top holiday for me. Head out to the pool this weekend and enjoy these Mexican style popsicles while you work on your summer tan!
Margarita Popsicles (Makes five 2 ¼ oz popsicles)
1 cup honeydew juice (approximately a whole melon weighing 1lb)
1/3 cup cucumber juice (approximately half a cucumber weighing 5oz.)
½ cup tequila
1 tbsp triple sec
1 tbsp fresh lime juice
1 tbsp mint simple syrup (1/2 cup water, ½ cup sugar, 1 cup mint leaves)
3 large mint sprigs
Blend together the honeydew and cucumber until pureed. Add in the tequila, triple sec, and lime juice. To make your mint syrup by adding the sugar and water into a pot over heat until the sugar dissolves. Allow to cool and add in the cup of mint leaves and let sit for 20 minutes. Strain your mixture and trash the leaves. Add the mint syrup in and blend the mixture well. Pour into the popsicle mold and allow to freeze for a couple hours before adding in a popsicle stick. Insert the popsicle stick and let it freeze over night! SO good.
Avocado Lime Tequila Popsicles (makes about 10 popsicles)
1 cup water
½ cup sugar
zest of 4 limes – about 2 Tablespoons
5 ripe soft avocados
1/3 cup lime juice (about 4-5 limes)
2 ½ Tablespoons tequila
½ teaspoon kosher salt
Start by combining the sugar and water into a small saucepan and boil until the sugar dissolves. Add in the lime zest and allow mixture to cool, preferably for a few hours. Remove the skin and seed from the avocados and add into a blender with the lime juice, tequila, and salt. Mix until smooth. Add in the sugar syrup and blend well. Add to your popsicle molds and make as noted in the first recipe.
