My Mother's Almond Vanilla French Toast

Few smells come close to that of cooking food in the morning. And when syrup is in the picture, there is no competition. Hands down, French toast sizzling in the skillet was my favorite thing to wake up to when I was growing up. I’ve always had a wicked sweet tooth and sugar in the morning puts anyone in a good mood.

My favorite recipe? My mother’s of course!

For this recipe, you need:

• 4 eggs
• 2/3 cup of milk
• 1 T maple syrup (plus however much you want on top of the finished toast)
• 1/2 C powdered sugar
• 1 T vanilla
• 1/3 C almonds (ground)
• 12 slices French bread

Set your griddle at 300° F, or if you are using a skillet on your stovetop, set the heat to medium heat. While that is heating up, take out a medium sized bowl and whisk together the eggs, milk, maple syrup, vanilla and ground almonds.

One by one, dip a slice of bread into the milk mixture and make sure to mix up the mixture before dipping each slice of bread so that the almond pieces don’t sink to the bottom. Place the slice into the griddle after it is soaked through. Using a spatula, flip the toast until it is a light brown color on both sides. Remove the griddle and place onto a serving plate. Repeat these steps until all bread is toasted.

Drizzle syrup over the top of all of the toast and sprinkle the powdered sugar over the top.

If you want a complete breakfast meal, scramble some eggs in butter and season with salt and pepper for a side dish. Cut up some fresh fruit in your kitchen into bite-sized pieces to go along with the eggs and toast. Serve the meal with orange juice or coffee.
