It’s Thirsty Thursday! Okay y’all, if you like dip, cheese, and anything with an Italian vibe prepare yourself for Baked Fontina. Oh and a Sangria recipe that will be perfect for those upcoming Thanksgiving get togethers as well! I made this dip for an American Horror Story dinner party last week (by the way, you must start watching if you don’t already!) and it turned out delicious!
Steps to cheese dip heaven:
• 1 ½ lbs Italian Fontina, rind removed and cubed into 1-inch pieces
• 6 cloves garlic, thinly sliced
• 1 tbsp fresh thyme, chopped
• 1 tsp fresh rosemary, chopped
• 3 tbsp extra virgin olive oil
• ½ tsp Kosher salt
• ½ tsp freshly ground black pepper
If you can’t find Italian Fontina, feel free to use a substitute cheese such as mild provolone, gruyere, or Gouda. I used Gouda when I made it! Set your oven to broil and adjust the top rack so that it’s about 5 inches from the top. In a cast iron pan, spread the cheese out and drizzle the 3 tbsp of olive oil on top. Next mix together all your garlic and herbs and sprinkle evenly over the cheese before topping with salt and pepper. Broil the dip for 6 minutes until the cheese is completely melted and bubbling. Remove from the oven and serve with bread, chips or crackers! This dip is trouble, y’all!!
Now for some Sangria for your sanity! I am personally a huge fan of Sangria, my favorite being at the Gristmill in Gruene, Texas. But since we can’t make it there by happy hour, here’s a recipe you can make at home!
Stairway to Sangria Heaven:
• 2 bottles of red wine
• 4 cups juice (pomegranate, grape, blueberry, whatever you fancy!)
• 4 sliced plums
• 3 – 4 handfuls sliced grapes
• A few cubes of watermelon
Add all the ingredients together in a pitcher and serve with ice! The longer the fruit soaks, the better it is so I would suggest making this the night before you want to indulge. Notice the Led Zeppelin theme here, might as well go put it on while you make these treats!
For those of you who aren’t red wine fanatics, here’s a bonus sangria recipe with white wine!
White Citrus Sangria:
• 2 bottles of white wine
• 3 cups of orange juice
• 2 sliced oranges
• 2 – 3 handfuls of white raspberries
Just like the other recipe, combine all ingredients in a pitcher and enjoy! Personally, the White Citrus Sangria sounds perfect for a little Sangria Saturday morning. Just saying.
Whip up the Baked Fontina and a pitcher of your preferred sangria and knock the socks off of your friends. Enjoy y’all!
