Spring Break Recovery

Finally time for Thirsty Thursday! Spring Break has passed but the headache and “what did I do to myself?!” feeling may still be lingering. The best way to nurse a hangover is to consume more... proven theory. Recover with this week’s drink and alcohol soaking appetizer!

Cherry Whiskey Smash
1 oz Jack Daniels
1 oz cherry juice
½ oz amaretto
½ oz brandy
2 oz Cherry Cola
5 cherries

Add the cherries to the bottom of a glass and smash. In a cocktail shaker, add the Jack, cherry juice, amaretto and brandy and shake well. Add in ice with your smashed cherries and pour in your shaken mix. Top off with the Cherry Cola and stir. Cherry and whiskey?! Doesn’t get any better.

Don’t ask me why but spinach dip accompanying happy hour cocktails is a legit combo in my book. Try this recipe and make yourself some Spinach Dip Bites!

Spinach Dip Bites
16 oz pizza dough
2 tbsp extra virgin olive oil
2 cups baby spinach, chopped
2 cloves minced garlic
3 oz softened cream cheese
½ cup light sour cream
2 tbsp fresh parmesan cheese
1/8 tsp chili powder
Big pinch of kosher salt
Sprinkle of pepper, about 1/8 tsp
1/3 cup shredded mozzarella cheese

Preheat the oven to 350. Spray a mini muffin cup pan with cooking spray and pinch off a small amount of pizza dough and add to each cup. Flatten dough on all sides of the cups and set aside. In a skillet over medium heat, heat the olive oil and add spinach. Cook until wilted (about 3 minutes) then add in garlic and cook for an additional minute before turning the heat off. Combine the cream cheese, sour cream, cooked spinach mixture, parmesan cheese, chili powder, salt and pepper and mix until well combined. Divide the spinach dip between the muffin cups (should make about 32 total) and sprinkle with mozzarella. Cook for 15- 17, allow to cool for 5 and eat up!
