I've been a fisher girl ever since I was big enough to hold a rod and reel in my hand. My family would take frequent trips to Rockport and Port Aransas to visit family and fish! I started out like most kids, fishing off a dock. But my dad quickly transitioned us into fishing out of our boat in the bay and eventually...I still don't know how he did it...he got us to wade fish OUT of the boat INTO the water with the fish and sharks and stingrays! There is something so relaxing about being on the water with a fishing rod in your hand. I have time to think, to pray, and to talk, three things that we have somehow lost time to do nowadays.

My dad recently took a fishing trip and caught his new record-sized flounder. So of course, when he got home, the only logical thing to do was to cook that puppy up and eat him! And boy was he delicious. Quote Mom: "This is the juiciest fish I've ever seen! Water keeps coming out of it!"

Oh and yes, those four huge fillets are all from that one big Mr. Flounder. He was juicy and tasty!

Here's how we prepared him:

1. Drizzle olive oil in a large skillet, and sprinkle sea salt, Herbes de this fish with whatever spice you like!

2. Flip the fillet and cover the other Provence and lemon juice.

3. Let it cook until the fish is white throughout.

I also cooked spinach to go with the fish! Put two bags of spinach into the pan Drizzle Raspberry Balsamic over the spinach and recover. After a couple of minutes, the spinach should shrink down and soften. Don't overcook it or it will turn very dark green and lose some of its flavor. Ew.

And there you have it! One super healthy and very organic dinner.
