Dessert in a cup. I’ve seen a million of these recipes on Pinterest, and decided to finally try one on my own.

What’s so great about making a one serving dessert in a coffee cup? Several things. For one, the cleanup is quick and easy. My least favorite thing about making brownies or a cake is the huge baking pan. For another thing, these desserts can be cooked in the microwave and take only 1-2 minutes to cook. And finally, it’s healthier and cheaper. When you make single-serving desserts you need less of the ingredients, meaning you won’t waste money by throwing away old stale brownies or cookies. And when you don’t make a whole batch, you won’t have leftover desserts sitting around your house for weeks. Which, let’s be honest, is a good thing for us all in the long run.

So what did I attempt? A simple chocolate cake in a mug with cream cheese icing.

For the cake you will need:
• 4 T flour
• 4 1/2 T sugar
• 1/8 t baking powder
• 1 1/2 T cocoa powder
• 3 T oil
• 3 T buttermilk
• 1 egg

Mix all of these ingredients into a large coffee mug and cook in the microwave for 1 1/2 minutes. After letting the cake cool in the mug for 5-10 minutes, you can make the frosting and pipe it into the center.

For the icing, mix together:
• 2 T cream cheese
• 2 T butter
• 1/2 C sugar

After piping in the icing, you’re ready to enjoy!
