In my home, we have a tradition of baking sugar cookies every year around Christmas time. We get the whole family together, mom prepares tons of sugar cookie dough, and we spend hours rolling the dough out, cutting out shapes, baking the cookies and decorating them with ornate details, colorful icing and tiny sprinkles. I love getting to spend so much quality time with my family. But in all honesty, my favorite part is getting to eat the sugar cookie dough.
Seriously. It’s sort of addicting or something. Recently I found out the secret ingredient that makes it near impossible for me to resist. It’s no secret family recipe, but the cookies it makes are better than any other I’ve tasted.
To make these divine delicacies, you will need the following:
• 1 cup butter, softened
• 3/4 cup sugar
• 1 teaspoon almond extract
• 2 cups all-purpose flour
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
If you want to make a glaze to go on top of the cookies, you can whisk together the following ingredients:
• 1 cup confectioners' sugar
• 1-1/2 teaspoons almond extract
• 2 to 3 teaspoons water
To make the cookies, cream the butter and sugar together in a large bowl for a couple of minutes. It should be light and fluffy. Mix in the almond extract.
In a separate bowl, mix together the flour, baking powder and salt. Gradually add this dry mixture into the large bowl and mix together well until smooth.
If you are making Christmas cookies, you can roll the dough out flat and cut out shapes with cookie-cutters. Otherwise, roll the dough into balls and place onto an ungreased cookie sheet. If you would like, you can flatten the balls out with the bottom of a drinking glass and sprinkle sugar over the top.
Bake in the oven at 400°F between 7 and 9 minutes. Remove and let cool.
If you chose to make the icing, you can drizzle it over the top or add food coloring to make the cookies festive!
