Easy Pizza Poppers

The first memory I made in Rome, Italy was one involving food. I arrived with two friends and we were anxious to jump start our touring adventure. We began with a mission to find the Trevi fountain. When we stumbled upon it, we were awestruck by the size and spent half of an hour chunking coins and taking pictures. After we realized we were hungry, we turned around to find a tiny pizza stand strategically set up beside the fountain.

I’m not sure what the secret ingredient of that pizza was; strangely I tasted a hint of pumpkin and spice. Whatever it was changed my pizza preferences forever. I’m a picky pizza consumer now, and recently discovered a way of making delicious pizza that is cheap, convenient, and made in a muffin pan.

•The four ingredients it requires are: pizza dough (I used Pillsbury pizza dough in a roll), pizza sauce, shredded mozzarella cheese, and pepperoni.

•Preheat the oven to 425 degrees and grease the muffin pan. Divide up the pizza dough into the muffin pan. (I was only able to make nine muffins with the dough I bought.) Push the dough into the pan, trying to cover the bottom and sides of each cup.

•Using a teaspoon, drop a full spoon of pizza sauce into each of the cups. Sprinkle mozzarella cheese over the pizza sauce, and add whatever toppings you would like. I used pepperonis that I bought and cut up into small pieces.

•Put the pizzas into the oven and bake for 10-15 minutes. If you use a larger muffin pan, you may need to leave them in for more time to cook them all the way through.

If you are feeling adventurous, and want to give your pizza an exotic taste, you may try adding pumpkin filling to the sauce or experiment with different spices. Another way to change up this recipe is to add different toppings. Any vegetables taste great as toppings. For those of you with a more sophisticated palate, try feta cheese instead of mozzarella and spinach and olives instead of pepperoni. If you are in a tropical mood, top your pizza with ham and pineapple.

These little pizza poppers are the perfect food to throw into a Ziploc bag and take with you to eat throughout the day as a snack or during lunch time. It’s a great way to save money, time, and to cook many meals at one time.
