It’s basically a known fact that the way to a man’s heart is through his stomach. Let’s face it ladies, most boys aren’t hoping for chocolates and flowers on Valentine’s Day. What they’re really wondering is what’s for dinner. Well this V-Day there’s a treat that is so delicious you’ll want to skip to dessert.
This recipe is simple and doesn’t take long to make. So whether you’re decorating the house or making your homemade cards, this will give you plenty of time to get ready for your sweet Valentine date.
Let’s get started!
½ cup of sugar
1 tsp vanilla
1 cup all-purpose flower
½ cup melted butter
2 ½ cups of strawberries sliced and cut into pieces
4 cups of vanilla ice cream (My favorite is Blue Bell)
To make the shortcake you will need to preheat the oven to 350 degrees. Get out a 9x11 baking sheet and make sure to melt your butter. In a mixing bowl, beat the eggs and sugar thoroughly. Add vanilla to the mix. Stir in the flour and make sure that the mixture stays nice and fluffy. Next add the melted butter. Pour the batter into the baking sheet and bake for 20-25 minutes. Once done baking, let cool and then set in the freezer for 20- 30 minutes.
Ice Cream and Strawberries:
Let the ice cream thaw so that you’re able to mix in the berries. Stir the two together until well combined. Place in the freezer.
Putting it all together:
Once cooled, take your shortcake and use a 4 inch cookie cutter to cut out about 8 pieces. (I would use a heart shaped cookie cutter if you’re looking to stick with the Valentine’s theme). Get the ice cream/berry mix and scoop it onto four of the pieces. Cover with the other four pieces. Put the Strawberry Shortcake Ice Cream Sandwiches in the freezer until you’re ready to serve dessert!
