Raspberry Scones

Downton Abbey is my new favorite show. The best way I know to describe this Masterpiece PBS series is like a Pride & Prejudice movie that never ends. It is a story of one family in the early 1900’s who lives in an old country house in England called Downton Abbey. The setting is idyllic and seemingly uncomplicated, until the family experiences a series of events that turn their carefully manicured lives upside down. First the sinking of the Titanic, then the Great War hit the family with tragedy and cause confusion about who is to be next in the line of succession to inherit the estate.

This past summer, I watched the first two seasons over and over. I even managed to hook my mom and sisters on the show and convinced them to spend a day with me eating scones and tea and watching the show. Which brings me to the point of me telling you all of this. To make the scones, I had to find a great recipe. And I did! (This recipe makes 8 scones.)

You will need the following:

• 2 C all-purpose flour
• 1/3 C & 1 t sugar
• 1 t baking powder
• 1/4 t baking soda
• 1/2 t salt
• 8 T frozen butter
• 1/2 C fresh raspberries (or whatever add-in you prefer)
• 1/2 C sour cream
• 1 large egg

For the icing: (optional)

• 2 C powdered sugar
• milk

Directions:

1. Preheat your oven to 400°F and make sure you have a rack in the middle of the oven to place your scones on when it is time to cook them.

2. In a medium bowl, combine the flour, 1/3 C sugar, baking powder, baking soda and salt. Grate the butter into the flour mixture. Using your fingers, work the butter into the dry mixture until consistent throughout.

3. In a small bowl, whisk together the sour cream and egg until smooth.

4. Stir the sour cream mixture into the flour mixture using a fork until large dough clumps appear. Using your hands, press the dough into a ball.

5. Carefully fold in the raspberries to the dough until they are evenly distributed throughout. Be careful not to crush the berries or let them fall apart.

6. Reform the dough into a ball, and place on a lightly floured surface. Gently pat into a circle about 8 inches across and about 3/4 inch thick. Sprinkle the remaining 1 t sugar over the top of the dough. Using a sharp knife, cut the dough into 8 even triangles. Place the triangles onto a cookie sheet lined with parchment paper. Make sure they are a couple of inches apart at least.

7. Bake for 15 to 17 minutes or until golden brown. Serve warm or let them cool to room temperature.

8. If you would like to add icing to your scones, in a medium bowl stir together the powdered sugar with 1 t of milk at a time. Continue adding small portions of milk until the mixture is as thick or thin as you would like. Drizzle the icing over the top of the scones when they have cooled.

So get baking and flip on Downton Abbey. You’ll soon be addicted!
