We all know what time of the week it is! This week we’re focusing on mom by giving you some easy and delicious recipes for Mother’s Day this Sunday. Every woman deserves a little pampering but most would rather actually spend time with their loved ones. So this weekend I’m encouraging you to whip up these treats, treat her to a homemade brunch and enjoy the day together!
Chicks in a Nest
1 20 oz package shredded hash browns
2 large eggs, lightly beaten
4 tbsp flour
1 small sweet onion, grated
2 thick slices ham, chopped up
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 dozen eggs, scrambled
Preheat the oven to 400 degrees and spray a 12 cup muffin pan with cooking spray. Begin by mixing the first eight ingredients together in a large bowl then add the mixture to each muffin cup until about a third of the way full. Press the mixture down to the bottom and sides of each cup to resemble a little nest. Bake for about 25-30 minutes until golden brown, add the scrambled eggs to each nest and prepare for the shock on your mom’s face. So dang cute but easy prep! Doesn’t get any better.
Don’t forget to make a delicious drink to wash down brunch!
Sorbet Champagne Floats
1 bottle of champagne
Sorbet (flavor of your choice)
Scoop the sorbet into champagne glasses, pour the champagne on top and you’re ready to go! Almost too difficult, I know. Perfect drink with a touch of sweetness for brunch with mom!
For those mom’s that aren’t looking for alcoholic beverages, try this delicious recipe!
10-12 mint leaves
Start by slicing the lemons and cucumber and add to a large pitcher. Next add in the mint leaves and fill with water. Allow to sit in the fridge over night so all the flavors fuse together and serve! This drink not only tastes great but is a natural detox to flush any impurities out of your system. Any mom can get on board with something that’s good for you!
All of these recipes are relatively affordable and trust me, a homemade meal and spending quality time with your mom will mean more than words could say. In my opinion at least! Hope y’all enjoy the weekend with family!
