It’s the start of Thirsty Thursday for 2013 y’all! Hope you all had a great holiday and happy New Year! I’m sure many of you were popping bottles to say goodbye to 2012 and more than likely have some left over champagne. Depending on how crazy you got that is! Try this Grape Sparkler to use up that extra bubbly!
4 cups seedless red grapes
2 tbsp lemon juice
2 tbsp honey
2 cups champagne
Puree the grapes in the blender to start and strain the juice into a pitcher or bowl. Try to get as much juice out of them as possible! Add the lemon juice and honey to your grape juice and mix until dissolved. Pour your glasses half full with the grape juice and add champagne to the top. Delicious and different! This recipe makes four drinks.
For those of you who made the ever popular resolution to be healthier in 2013, here’s a recipe for White Bean and Artichoke dip that low cal, 27 calories per tablespoon to be exact, and still satisfying!
1 clove garlic, peeled
1 tsp dried rosemary
3 tablespoons lemon juice
2 cans (15.5 oz) white beans, drained and rinsed
1 can (14 oz) artichoke hearts, drained
Add the garlic and rosemary into a food processor or blender and chop finely. Blend in the lemon juice then add the beans and artichoke hearts and puree until smooth. Serve with veggies, my favorite Pretzel Crisps or pita chips and enjoy! Skip the urge to grab the potato chips y’all. Let’s stick to our resolutions! This recipe makes about 2 ½ cups and will keep in the fridge for 2 – 3 days.
