It’s Thirsty Thursday y’all! The holidays have passed but New Years is upon us. You know what that means… parties, the annual ball drop, sparkly outfits, an abundance of champagne and midnight kisses. Whether you’re throwing a party, going out on the town or just having a casual night at home, here are some drinks and appetizers to kick off the New Year right!
1 (12 oz) can frozen fruit punch concentrate, thawed
1 (6 oz) can frozen orange juice concentrate, thawed
1 (6 oz) can frozen lemonade concentrate, thawed
2 (750 ml) bottles champagne (substitute 2 liters of ginger ale for the non alcoholic version!
1 quart orange sherbet
Come New Years, there will be champagne everywhere you look and that’s not necessarily a bad thing. This punch puts a twist on the classic beverage and makes enough for 15! Combine the fruit punch, orange juice and lemonade concentrates into a large punch bowl and stir well. Add in the champagne and orange sherbet just before serving and enjoy!
Depending on your NYE plans, you could be making a variety of appetizers or just a little something to nibble on for your family. Either way, try these Spinach Bites! They’re easy to put together and delish! This recipe makes 24 bites.
1 (10 oz) box frozen spinach, thawed
4 oz cream cheese
2 (14 oz) cans of artichokes, drained/chopped
1 ½ cups biscuit mix
1 cup milk
1 cup Parmigiano-Reggiano cheese, grated
Preheat your oven to 350 degrees to begin. Place your cream cheese in the freezer for about 5 minutes to chill before you chop into a small dice shape. Remove the extra liquid from the spinach and place into a large bowl. Next add your artichokes, Parmigiano cheese, biscuit mix and milk. Mix all the ingredients and then add in your diced cream cheese. Spray your mini muffin pan with nonstick spray and divide the spinach mixture into each cup. Bake for 12-15 minutes or until puffy and golden in color. You won’t be able to keep these on the serving dish I swear!
