Say Goodbye to Warm Weather with Raspberry Lemonade

It’s Thirsty Thursday y’all! Today I bring you a delicious Raspberry Lemonade cocktail and some tasty Cucumber Nibblers. This icy concoction and healthy appetizer combo is both cool and refreshing as we say goodbye to summer.

For the lemonade, the ingredients are simple:

• 1 (12 ounce) can frozen raspberry lemonade concentrate
• 12 ounces of vodka
• 1 lime
• Fresh raspberries (optional)

If you can’t find raspberry lemonade, pink lemonade will work as a substitute! In a pitcher, prepare the lemonade concentrate as instructed substituting one of the called for cans of water with vodka. Squeeze the juice from one lime into the mixture and stir well. To really look like a pro, add some fresh raspberries or take it up a notch by freezing the berries inside ice cubes to create the illusion you worked super hard on preparing it. This recipe serves six, so get to mixing for girls night!

For the tapa (appetizer in Spanish for you gringos) of the day, we’re making Cucumber Nibblers with a garlic herb cheese filling. Let the mouth salivating start… now.

Featured in these nibblers is:

• 1 (5.2 ounce) package of garlic herb Boursin cheese
• 2-3 tablespoons of heavy cream
• 1 cucumber

Super complicated right? I would recommend going to HEB to find the Boursin cheese since I couldn’t find it at Wal-Mart, but really any garlic herb cheese will do. Put the cheese in a small bowl, add the heavy cream, and mix well. This is to make the filling easy to add onto your cucumber slices. Now, you can put the filling into a pastry bag with a fancy tip to squeeze on the slices or use a melon baller to scoop it on just as nicely and then set aside. Now for the cucumber! For that cute factor, peel the skin off in stripes and then cut into ½ inch thick slices. Next, use your handy dandy melon baller to scoop out the seeds in the middle. Don’t get too scoop happy; make sure you still have a bottom to keep the filling from falling out. Arrange the slices on your serving platter, add a dollop of your cheese mixture and you’re done!

These recipes need to be enjoyed ASAP! So, call your girls, pull out your favorite board game or curl up on the couch and watch the latest Housewives episode. I promise it will be a success and the low cal factor (with the snack at least!) will entice your guests even more. Get to it, y’all!
