Food Stamp Challenge, Kid Friendly Meal Ideas

Eating healthy on a budget is challenging, but so is making a meal your kids will actually eat and enjoy.

Eating healthy on a budget is challenging, but so is making a meal your kids will actually eat and enjoy. I've heard from a few moms asking for creative kid friendly meal ideas, so I've done some investigating.

I talked with Kristin Shaffer, a dietitian with St. Joseph Regional Health Center. She recommended two websites that have a lot of great ideas; Cookinglight.com and Eatingwell.com. I searched through both websites and I found some great articles. Here's one dedicated to feeding a family of four for $10. There are a few recipes that I think the kids may enjoy:

The Texas AgriLife Extension Service offers the Better Living for Texans program.  The service offers educational programs where you can learn additional healthy eating tips and walk away with great recipes.

Angel Fattorini with the The Texas AgriLife Extension Service also told me about another program that the service provides to Texans. It looks like a great program.

It's called Dinner Tonight! It's your source for quick, healthy, economical recipes--meals you can make tonight! With Dinner Tonight! recipes, you can easily prepare meals at home, saving money, improving nutritional value, and controlling food safety, compared to fast food or restaurant meals. Dinner Tonight! recipes are developed, tested, and presented by Extension experts and educators specializing in food and nutrition.
