Today is day four of the Food Stamp Challenge, and so far, so good.
I had to skip out on my Friday Starbucks run. I only allow myself Starbucks once a week, because the cost can run up quickly. Other than that, it's been just fine.
I baked the potato this morning, so that I would have something different for dinner tonight. You learn to be creative when you have a limited supply of food. So, tonight I'll be eating half of a baked potato topped with the black beans I made earlier this week and salsa that I already had in the fridge. I think it sounds quite tasty.
Here's what I've eaten so far today, and what's for dinner:
Breakfast
1 cup oatmeal
1 banana (This was my last banana, so breakfast will be sparse for the rest of the challenge. In hindsight I should have eaten half of a banana with breakfast everyday instead of the whole thing. As for fruit, I only have one apple left.)
Lunch
Leftover Beef and Rice Florentine (find the recipe in the previous blog)
Dinner
Half of a baked potato topped with black beans and salsa
1 cup yogurt
I will roast the chicken fryer this weekend, to give me some variety for the rest of the week. I've a little apprehensive about roasting a whole chicken. I'll let you know how it goes.

The challenge should be harder this weekend. We have family coming into town, and they'll bringing lots of food. However, I'm a very dedicated person, so once I start something I don't stop.
