I'm on day three of the Food Stamp Challenge, and things are still going smoothly.
There have been a few bumps in the road. I really would like to have a cup of coffee to help with the headache from caffeine withdrawal. But, that's enough complaining. I'm only doing this for seven days, while others live like this for months, even years.
I now know why coffee is one of the most requested items during the Food for Families food drive. I will be clipping coupons and contributing as much as I can this coming year. The only other challenge today, is that there has been a lot of free food in the newsroom. If you remember, as part of the challenge, I cannot accept handouts. So, no sweets for me.
Since it's getting colder outside, I thought I would pass along another healthy, budget friendly meal idea perfect for a fall night. This recipe for Spicy Tortilla Soup feeds seven. It costs $.69 a serving and has 230 calories per serving which is 1 1/3 cups. I'm going to try this one out when I'm done with the challenge.
Here's another recipe to spice up your rice. I bought brown rice for the Beef and Rice Florentine. I plan on trying this recipe as well when I finish the challenge. Variety is great when you can only afford certain items!
Here's what I've eaten so far today, and what's for dinner:
1 tablespoon peanut butter
1/2 cup skim milk
1 Tuna fish sandwich (half a can of tuna, two slices whole wheat bread, 1 tablespoon miracle whip)
1 cup yogurt
1 1/2 cups of the Beef and Rice Florentine
1 cup black beans
So, I haven't branched out much today. I will cook again tomorrow. I plan on getting creative and making my baked potato and putting the black beans with salsa on top. I think it sounds pretty tasty. I'm letting the chicken fryer I bought defrost and plan on roasting it on Saturday. That should get me through Tuesday.
