Day 5 - TGIF

And after just one week, I'm truly starting to feel and see the effects of all this hard work. Everything is starting to fit better and the number on the scale is going down!

One week down and another week closer to the wedding!  And after just one week, I'm truly starting to feel and see the effects of all this hard work.  Everything is starting to fit better and the number on the scale is going down!  I'm really looking forward to our first Weigh in Wednesday which will be featured on Brazos Valley This Morning next week.  It will be our first look at just how this program is working, how much I've lost and how much I still have to lose.
 
I've been sticking to the diet pretty well but I must admit, I did have 4 chips with some queso last night.  It's one of my favorite foods and since Meredith and I went to Ninfa's last night with a friend, I had to have some.  But after that I got right back on track and ordered the cevichi.  If you've never had cevichi it's kind of an acquired taste but it's very good.  What people have a hard time with is the seafood in the dish.  It isn't really cooked, it's more pickled.
 
Since I've never cooked it, I have to go to the source.  According to Wikipedia cevichi is marinated in a citrus-based mixture, with lemons and limes being the most commonly used. In addition to adding flavor, the citric acid causes the proteins in the seafood to become denatured, which pickles or "cooks" the fish without heat.
Basically, if you enjoy seafood or anything with lime it, you'll love cevichi. 
 
I must admit, I am getting bored with eating a banana with peanut butter every morning!  Next week we'll switch it up with an apple and peanut butter!

Enjoy the NFL Playoff games this weekend!  I'll be pulling for the Eagles since Rodney Harris is such a big fan.
