Brazos Valley Bucket List - New Republic Brewery

When you first walk into the New Republic Brewery, it looks like an incredible science experiment with large cylinders, spigots and computer equipment.

But as it turns out, these locals are simply creating a tasty Brazos Valley brew called the Bellows Amber Ale.

"I moved out here from California in 2008 and noticed that there was no brewery," said New Republic Brewery founder Dean Brundage.

Brundage had an idea to start making a Brazos Valley beer and teamed up with fellow home brewer and friend John Januskey.

"He was the one stupid enough to commit and here we are," joked Brundage.

"It's seemed like a good time to do it. Dean and I get along really well and we have similar interests so it's been a lot of fun working together and getting this going," said Januskey.

The pair rented out a workspace to create their masterpiece and have been working on the right combination of water, malt, hops, and yeast since September. Now they have the perfect pint.

"Local beer is all about good beer. The best beer you're ever going to have is right after it has come out of the brewery, when it's fresh, it's going to taste great and it's local," said Januskey.

"I think a lot of people just like the fact that there is a local brewery and I'm happy about that," said Brundage.

The New Republic Brewery has only been selling its beer for a few months but it's already got an incredible following.

"We first got the beer in here two weeks ago and overnight, it's turned into our number one selling beer," said Alex Long owner of Church Street BBQ.

It turns out the ale happens to go perfect with a plate of BBQ.

"The taste of it is similar to a lot of the bigger name craft beers but the finish on it is a lot cleaner. There's no bitter after taste so people really enjoy it," said Long.

"It really does have a good flavor and College Station is already a fun town and to have a beer associated with it, that could bring more people out here," said patron Monika Morales.

The craft beer as they call it had a calling here in the Brazos Valley and these beer barons have answered.

"We have almost fewer craft breweries per capita then any other state in the nation but we have more beer drinkers per capita than most other states in the nation so we've got a big gap to fill," said Januskey.

"We're the first micro-brewery in town, there are a couple of brew pubs here which is good. We want to be a regional player, we want to serve all of Texas," said Brundage.

You can find the beer that the New Republic Brewery makes at Church Street BBQ, the Brazos Valley Ballpark, O'Bannon's, Murphy's Law, Village Café, Revolution Cafe, and Good Time Charley's in Downtown Bryan.

The Republic Steakhouse in College Station is also in the beer business with three brews of their own that you can find exclusively at the restaurant.
