Fried Rice


2 Tbsp Peanut Oil
1 Tbsp Garlic, minced
2 slices Bacon, small diced
½ cup Onions, white, small diced
¼ cup Peppers, red and/or green, small diced
¼ cup Carrots, small diced
2 ea eggs, well beaten w/2 Tbsp water
4 cups rice, cooked dry
¼ cup Green onions, chopped
2 Tbsp Soy sauce
to taste salt and pepper (white pepper is best)
½ cup peas, frozen green type, thawed


In hot pan or wok add oil, bacon. Cook until bacon shrinks down and begins to brown. Add garlic. Add white onions, peppers and carrots. Saute or stir-fry until carrots are almost fully cooked, about 1 min. Add rice and stir-fry for about 30 seconds. Move vegetables and rice to side of pan and pour eggs into the empty space. Do not stir until eggs are fully cooked. When eggs are firm, about 45 seconds, stir all together. Add soy sauce, green onions, thawed peas and salt & pepper. Stir until peas are hot, about 30 seconds. Serve hot. You may add an endless variety of cooked or raw meats and vegetables to make your own specially flavored rice. Experiment and have fun!
