Mi Steak a Lo Pobre


Chimichurri Sauce
1 cup parsley – cut
2 cloves of garlic – chopped
½ cup cilantro
¼ tsp red chili flakes
½ tsp cumin
½ tsp salt
1/3 cup red wine vinegar
½ cup olive oil


Place all above ingredients in food processor to create a “paste”. This marinade is ready to use as a marinade or side sauce. Marinade should be enough for 4 to 5 medium sized steaks.

Place prime beef tenderloin steak with chimichurri sauce in baggie and refrigerate overnight – marinade steaks individually in baggies to allow for complete coverage. Marinate at least 24 hours. When ready to grill steak, remove from marinade, salt and pepper to taste and drizzle olive oil over steak. Grill on all side over medium heat. Finish steaks in 350 oven until steak is medium done.
