Beef Wellington


Prime Beef Tenderloin – salt & peppered (for this recipe, only used 2)
Pate mixture
4 sliced mushrooms
Squeeze of lemon juice
Whole butter to sauté mushrooms in
Pastry Sheets
Egg yolk mixed in heavy cream


In sauté pan with a little clarified butter, sear tenderloin on all sides to seal in juices. Place tenderloins in baking dish and finish in 350 oven for about 7 to 10 minutes – tenderloin will be cooked to about medium. Saute mushrooms in butter with a squeeze of lemon juice and salt & pepper.

Place cooked tenderloin on pastry sheet, add pate mixture and mushrooms over tenderloin, then fold pastry sheet over all filling. Fold down and seal pastry sheet and cut off excess pastry sheet. Brush pastry with egg yolk mixture. Bake in 350 oven until golden brown – about 10 to 15 minutes. Serve hot.
