Plantain & Chipotle Salsa


2 Plantains – roasted
1 can of fire roasted chipotles
1 ½ tbsp garlic
¼ bunch cilantro
1/3 cup onion
Squeeze of fresh lime juice
1 tsp salt
1 pinch sugar
1 tbsp vinegar
1 ½ cups extra virgin olive oil
hot water
garnish with sour cream


Roast the plantains in a roasting pan until skin is blackened and the plantains are splitting open. When done, peel off skin and put pulp into blender along with the remaining ingredients. Add touch of hot water to all ingredients for desired consistency. Blend ingredients. Serve with chips as appetizer.
