Classic Rueben


Russian Dressing for Sandwich:

Mix 2 to 1 Mayonnaise to Ketchup (1 cup mayonnaise, ½ cup ketchup)
Horse Radish to taste
1 tbsp Worcestershire
1 tsp Vinegar
1 tbsp Sugar
½ tsp Seasoned Salt
Squeeze of Fresh Lemon Juice
Marinate sauerkraut in Russian Dressing for 24 hours in refrigerator. Save some dressing for spreading on sandwich.

Sandwich Ingredients:

Pickled Corned Beef
Marbled Rye Bread
Russian Dressing
Swiss Cheese
Clarified Butter


On hot griddle with clarified butter, toast bread and heat corned beef. Once heated, place corned beef on marbled rye bread which has been spread with Russian Dressing (“open face” style). Top meat with marinated sauerkraut (warmed in microwave prior to placing on sandwich) and slice of swiss cheese. Broil in oven until cheese is melted. Serve hot.
