French Alps Potatoes


3 to 4               strips of bacon – diced

1                      medium onion – sliced thinly

3 to 4 tbsp       butter

2 to 3               pre-baked or boiled potatoes – medium dice

brie cheese – enough to top individual ramekins or baking dish

To taste            Heavy Cream Salt & Pepper to taste


Saute bacon pieces in butter over medium heat. Add onions and sauté until clear. Remove from heat. To individual buttered ramekin cups or a butter baking dish, add medium diced cooked potatoes, top with bacon and onion mixture. Sprinkle with a little salt and pepper (go easy on the salt as bacon may already be salty!). Top with sliced brie cheese and drizzle some heavy cream over dish or in each ramekin. Place in boiler to melt cheese and heat potatoes. Is excellent as a side dish.
