Sicilian Sunday Pasta


Beef Short Ribs (bone in)
Italian Sausage
½ cup diced onion
½ cup diced celery
2 tbsp chopped garlic
1 cup tomato paste
1 ½ cups crushed tomatoes
¼ cup olive oil
4 cans (15oz) tomato sauce
4 cups hot water
¼ cup sugar
2 to 4 whole boiled eggs, peeled


Salt & Pepper to taste the beef short ribs. Drizzle olive oil in medium heat pan and cook all sides of ribs til golden brown.

Sauce: In medium heat sauce pan, add olive oil, celery and onion and cook until clear – do not brown. Add tomato paste and allow to cook for 30 or 40 minutes for best results. Stirring occasionally. Stir in 4 cans of tomato sauce and crushed tomatoes. Add hot water and allow to come to a boil. Once it comes to a boil, reduce heat to simmer, add seared ribs and Italian sausage and allow to simmer for 3 hours. Sauce will reduce down. About an hour before serving, add boiled eggs.

Serve sauce hot over cooked pasta with meat. Top with bread crumbs, if desired.
