1 lb Ground Beef
1 lb Ground Lamb
2 stalks Celery – chopped/diced
1 Onion – diced
1 tsp Fresh Garlic
2 eggs
½ cup Bread Crumbs
2 tbsp White Wine
1 tbsp Fresh Chopped Parsley
1 tsp salt
½ tsp pepper
8 slices Smoked Bacon
16-20 Mozzarella Cheese cubes
2-3 tbsp Olive Oil


In sauté pan, sauté together the celery, onion and garlic. Allow to cool slightly. In large bowl, combine beef, lamb, eggs, bread crumbs, wine, parsley, salt & pepper along with celery/onion sauté mixture and knead or blend ingredients together. Form meatball shape and insert cube of mozzarella cheese into meatball closing up opening where cheese was inserted. Wrap each meatball in smoke bacon (may only need ½ slice of bacon for each meatball).

In frying pan with about 2 tbsp olive oil, fry the meatballs with bacon side down, starting with the open side of bacon down first to seal seam. Continue frying on all sides of the meatball/bacon. Remove meatballs from frying pan and place in shallow baking dish and allow to finish cooking in a 350 oven for about 10 to 15 minutes.

Serve warm as an appetizer or with a side salad.
