Curried Turkey Salad


2 lbs Roasted Turkey – chopped
¾ cup mayonnaise (to taste)
½ cup golden raisins
2 tbsp chopped celery
2tbsp chopped onion
½ tsp white pepper
¼ tsp cayenne pepper (optional)
2 tbsp curry powder
1 tsp chopped cilantro
¼ tsp salt


Stir all above ingredients well with a spatula. Once stirred, fold in the following:

½ cup diced pineapple
½ cup toasted almonds

Allow mixture to sit in the refrigerator overnight. Serve chilled as a salad or sandwich.
