Italian Sausage Stuffed Duck Breast


½ lb Italian Sausage
¼ cup Parmesan Cheese, grated
½ - ¾ cup Wilted Spinach
¼ cup Bread crumbs
To taste Salt & Pepper
4 duck breasts, skin on (muskovy duck breasts were used for this recipe)


Mix the first 4 ingredients well and set aside. Prepare duck breasts by scoring the skin on one side of the duck, then loosening the skin so that a space is created between the skin and breast. Stuff about ½ cup sausage mixture under the duck breast and even out throughout. Salt & pepper both sides of the duck breast.

In a medium-high skillet, melt butter and add duck breast skin side down until browned. Turn and sear on other side until browned. Transfer duck breasts to shallow baking dish and place in 350 degree oven to finish cooking for about 15 minutes.

Remove from oven and allow to sit for about 5 minutes and serve with your favorite side dishes.
