Lobster Roll Sliders


Lobster – poached in salted water for about 8 minutes. Then pull out fresh lobster meat, taking care to keep the meat as much together. Slice bigger pieces to allow for making of sliders.

Homemade Tarragon Mayonnaise Ingredients:
2 egg yolks
1 tsp squeeze of lemon juice
1 tsp Dijon mustard
Fresh tarragon leaves – chopped
1 cup oil
Salt & white pepper


To prepare tarragon mayonnaise:
In large bowl, add 2 egg yolks, lemon juice and Dijon mustard. Add oil a little at a time while constantly whisking, causing mixture to slightly thicken. Season with salt & pepper and stir in fresh tarragon.

To prepare lobster sliders:
Melt butter until it’s cooked down. If lobster was prepared earlier, you can heat up the lobster in a little pan over medium heat until heated through with some of the melted butter. Spread butter on inside of buns, then spread with fresh tarragon mayonnaise. Add heated lobster and add any other ingredients you wish for your slider such as watercress lettuce, etc.
