Maitre d Butter


1 lb butter
2 tbsp shallots, chopped
3 tbsp garlic, chopped
1 tsp fresh parsley, chopped
¼ cup white wine
2 tbsp sherry
1 tbsp truffles
1 tbsp black truffle oil
1 tbsp white truffle oil

Salt & pepper to taste (about 1 tsp combined)


Mix all ingredients in mixer. Pour out mixture on parchment paper. Fashion butter into a tube shape by rolling in the parchment paper. Wrap ends of parchment paper and place in freezer. Butter is ready to use by cutting off portions as needed. Keep frozen until ready to use.
